*Spiced Cranberry & Orange Relish*

This is one of the recipes I love from the book & blogged about yesterday.
Spiced Cranberry & Orange Relish.
This is soooo lovely, I haven't got around yet to making any this year so I'm afraid only a quick snap shot out of the book as a photo.
I will have to get some made this week though as it is my favourite!

This recipe makes about 450g.

Ingredients:
225g frest cranberries
1 onion, finely chopped
150ml port (although I think I generally use what's in the house at the time!!!!)
115g caster sugar
finely grated rind & juice of 1 orange
½ tsp english mustard power
¼ tsp ground ginger
¼ tsp ground cinnamon
1 tsp cornflour
50g raisins

How to:
♥ Put the cranberries, onion, port and sugar in a pan. Cook gently for 10 mins until tender.
♥ Mix the orange juice, mustard, spices and cornflour together. Stir them into the cranberries.
♥ Add the raisins and orange rind. Allow to thicken over the heat, stirring with a wooden spoon
and then simmer for 2 mins.
♥ Cool, cover and chill ready for serving.

I have made this for other people & they seem to love it as much as me.
Much nicer than cranberry sauce from a jar for your Christmas dinner.
I have also served it for parties to accompany a cheese board & it is delicious with cheeses too.
